Fall is here....

With that I am thinking of dishes that are synonymous with this time of the year. Of course CHILI always makes the top of my list.

My dad brought me some peppers out of his garden, they have been sittin on the counter for a week now, I had to use em. SO.... JAMBALAYA is now on the list right below CHILI...

"Ferland's Way to Salty Jambalaya recipe" (btw -no idea regarding exact measurements...WING IT! (probably why the shit is so salty)
(can be modifed to NOT be salty, my bad)

Ok, So I decided I wanted sausage and shrimp in the Jamba.
Whole Foods - Spicy Thai Chicken Peanut Sausage - 4 links
Farmer Jack - Pre-Cooked Shrimp - 30-40 of em

Joanna doens't like onions (poor shame), so I had to cut those out but here are the vegatables:
Celery
Peppers - banana , some where red, some were green, all tasted the same to me.
1 cans of Kidney Beans
2 cans of Stewed Tomatos

Spices:
Oregano
Thyme
Basil
Salt (hehehe, not needed)
Franks Red Hot
2 Chicken Cube things (again ENOUGH SALT to dry up a small lake)

RICE:
3 boxes Near East Spanish Rice - btw the spanish rice seasoning has SALT IN IT......god damnit!!!!

Ok, so I cooked the Thai Chicken sausages up first.

In a stewing pot I mixed:
Spices - Oregano, Basil, Thyme, Franks Red Hot, Salt (seriously, don't add it but that is what I did.)
Stewed Tomatos
Kidney Beans
3 Cups of water - I think I would have used chicken broth here if I would of freakin remembered to buy the shit. SO instead, I used 3 cups waer and added 2 chicken boulin cubes (F%&^ SALT).

Let that simmer and get all simmery! SIM.

So then I chopped up the celery and peppers. I then tossed that into a pan with some oil and GARLIC BABY!! I sauteed for like 10 minutes.

Chop up the Chix sausage that was already cooked.

Pour peppers and celery into the simmering stock pot.

Re-heat the chopped up sausage (5 mintues in the pan). Toss it into the stock pot too.

Add the 3 packs (3 cups of rice) of the Spanish Rice. ( I used two of the seasoning packs that came with it. You may use 1 but then cut all other Salt out of the recipe.

Let that shit simmer some more, like 25 minutes until the rice absorbs that liquid up. Keep mixin.

After like 25 minutes I tosse dthe shrimp in. (removed the tails, they were pre-cooked). I let that sit another 10 minutes.

Thats it.... this was my first attempt at it. I will adjust the SALT next time. I think it is solid otherwise.

Mooooving

So, the office is moving. We found out last Friday and we need to be out by this Saturday. Not much time, right? No kidding. It's going to be a hectic week of packing!

Our desks are being disassembled (no disassemble!!!) today to start their journey to the new building. At some point, Mike and I will be working on a card table (for the rest of the week). I hope they put our table right where we are now - I'm used to it!

On the positive side: my daily commute to work will soon only take me about 3 minutes. Yes - 3 minutes.

Urinal in the basement/garage

I need a urinal in one of those two places. Most likely it will land in the basement but it would be kind of cool to have it next to the work bench. I could argue the productivity angle while working on the house.

Here kitty, kitty

This weekend is the Humane Society's "Meet Your Best Friend at the Zoo" event. I think I want a kitty. Jim has agreed to it as long as we get a baby kitty so that we can raise it to be cool. He doesn't want a scared little cat that runs and hides when someone comes over (like Maria and Mike's cat, Julius). He wants a friendly one (like Maria and Mike's cat, Snickers).

Fishing trip

Well, I'm working on rebuilding previous fishing trips pages. I figure I may just post the pics from this year while i'm at it.

I'll be reworking some links and such too. Lots of old stuff just needs to go.

Welcome to ERIC CAM...

Looky what we have here!

Todd is fishing and rinkin'.

And I am stuck here with all you fools.... (could be worse, we could be in the same room instead of virtual)

Well, NFL got kicked off this weekend. I am not very happy about my teams performance this week (FF). Week1 is always tough to get your lineup situated. I will have a much better week2 and still compete in FF Playoffs this year.
I was actually too tired to worry about football. I had a GM change that was executed at 1am Sunday morning. We had some issues with routing and didn't finish till 2pm...2 PM... OUCH. I woke up in time to see the Lions post their "W" over GB. HOTNESS!

Trip Time Again

Well, it's again time for Mike and Dee to go on a business trip. We'll basically be gone for 2 weeks. We aren't driving ourselves this time, so we shouldn't have any problems as big as our "Pentagon" experience in Washington, DC. We will be attempting to figure out which train takes us from Grand Central to Connecticut though. Actually, we need to find the right train, buy the right tickets and successfully board the train. That will be one of our first NY tasks this trip. Thank God we don't have to deal with it during rush hour!

We'll try to keep up with the rabbit as much as possible. If we come up with any funny tales of our travels, we'll be sure to post!
